Since the opening of Menrui Okabe noodle shop in 1963, this Omi champon restaurant has kept the traditional taste. They have about 70 shops in Japan that have made the name Omi Champon famous nationwide, which is Shiga’s soul food with golden Japanese broth, generous cabbage, bean sprouts, mushrooms and other vegetables, and pork.
Chanpon-tei’s golden broth is made of Omi chicken bones, Donan seaweed, and 6 kinds of dried fish. It is cooked on high heat in a small pan to bring out the sweetness of the vegetables and emulsify the meat fat. It is light, yet rich and flavorful.
It is good as it is, but twists are fun, too. Adding a half-soup-spoonful of vinegar multiplies the tastiness. Adding the shop’s chili oil will give it a kick. Adding vinegar and chili oil will turn it into Chinese noodles. Garlic or ginger will change the flavors.
