Sechi-Yaki is a unique dish that takes yakisoba (fried noodles) and binds it together using only eggs—without any flour—to create a savory, okonomiyaki-style pancake. The dish originated in the 1950s, when the original owner, Natsuko Yamashita, responded to a customer’s request: “Mix yakisoba and egg together!” ("yakisoba, tamago de sechigoute"). The word sechigou means “to mess things up” or “mash together” in the Gobō dialect, which is where the name comes from.

The menu offers five versions of Sechi-Yaki, featuring squid, pork, beef, shrimp, or a hearty mix of all four. Each version is packed with generous chunks of ingredients, making for a satisfying bite. The dishes are cooked right on the griddle in front of you by staff, turning the wait into part of the experience.
