The restaurant’s pride lies in its carefully selected, high-quality meats, chosen by the owner’s trained eye. Only premium wagyu is used, including top-grade Oita Wagyu (Bungo Beef) from Oita Prefecture, Saga beef, and Kyushu-raised Japanese Black wagyu. Skilled craftsmen hand-cut each slice, judging the marbling with precision, to bring out the best of each cut through simple, ingredient-focused preparation.
