Menya Hanabusa Osaka, enjoy Chyuka Soba with their house special broth!
Recently I visited Menya Hanabusa. The restaurant often ranks amongst Osaka best Ramen Shops and is popular because it offers artificial flavour-free and additive-free broth for it’s Ramen!
The Menu
Their most popular dish is Chyuka Soba (¥700). Are you a big eater? Get the Omori size by adding an extra 100 yen.
To order, first buy a meal ticket at the shop’s vending machine.
The shop only has seating for 8 at it’s single counter.

The Chyuka Soba was heaped with chopped spring onions
The Chyuka Soba was heaped with chopped spring onions, Chashyu pork, duck loin, boiled egg(halfed), and Menma (preserved bamboo shoot). The owner loves spring onions so a generous amount is always added to his Ramen dishes.
This soup was exquisite!
I could definitely smell the dried sardines in the soup! The base of their chicken stock comes from Nagoya-Kochin chickens (a famous brand of chicken in Japan). To enhance the depth of the flavour, they added dried horse mackerel, mackerel, sardines, and round herring sardines. The Umami from the chicken and seafood was bursting in my mouth! What a simple yet profound flavour!
I’m already hooked!
Their special house noodles which are hand made.
Their special house noodles are flat and straight like Italian fehttuchini pasta. In the Ramen world this type of noodle is called Hirauchi (which means flattened) straight.
The chewiness was perfect. It matched the soup so well.
Chashyu and Nitamago!
The pork was first stewed until tender, then grilled to make surface toasty.
The Nitamago was very rich and the yoke was soft and creamy. It’s a “must have” when it comes to any authentic bowl of Ramen! I enjoyed the crunchy texture of the Menma as well.
What is Chyamen don?
I ordered it to see what it’s all about. It was a bowl of rice heaped with Chasyhu and Menma!
Tasty minced Chashyu and the crunchy Menma on top of Koshi-hikari rice (a specific type of rice grain which is strictly regulated) from Niigata prefecture. What a steal of a deal for ¥150!!!!
The price was reasonable and I could eat here everyday!
If you like a strong seafood flavoured broth, then this is the place for you.
Don’t forget to try the reasonably priced and tasty Chashyu Don as well!
