Tsukemen boom was started by Tsukemen TETSU’s head restaurant in Sendagi. This branch is on the ground floor of Mitaka Station building, busy around lunch time with a waiting line.
The soup stock made of pork bones and chicken bones is blended with the soup made of fish - rich yet enjoyable with each sip. Medium-thick noodles are made of TETSU original flour, a blend of flour for udon noodles and bread flour. They are chewy and smooth to perfection.
When the soup gets cold, add TETSU’s original “Yakiishi (toasted stone)” and it will be hot again. If you have thick left-over soup, you can thin it with the bonito soup in the pot on the table, and it will be delicious to the last drop.
Chinese soba noodles(Ramen) come with the soup made of lots of fish, tasty for medium-thin noodles - a classic, nostalgic flavor for many fans.
