The broth—key to its flavor—is made from a rich yet refreshing blend of tamari soy sauce and carefully selected bonito and mackerel flakes. The noodles, provided by the long-established Yoshida Noodle Company (founded in 1890), are crafted using only premium domestic wheat flour and salt. Adjustments in flour composition and salt concentration are made daily based on weather and seasonal variations, resulting in a silky-smooth, chewy noodle reminiscent of handmade texture.
