Carrying on the lineage of an unagi specialist established in 1946 in Joshin, Nagoya, the restaurant brings to Ginza time-honored techniques passed down for more than 70 years.
Since its founding, the standard has been kabayaki prepared from a whole unagi.
The signature dish is Nagoya-style jiyaki unaju, grilled over direct binchotan charcoal without steaming.
Grilling a whole unagi yields a crisp exterior and a fluffy, tender interior.
To showcase the contrast between crisp skin and tender flesh, the restaurant deliberately does not offer hitsumabushi.
