Hida Kotte-ushi
Enjoy high quality Hida Beef sushi as a street food in the historical district of Hida Takayama.
Located in the historical district of Hida Takayama, the Kotte-ushi specializes in nigiri-sushi topped with Hida beef for takeout only. Eating Hida beef at a reasonable price while strolling about the traditional town of Hida Takayama has become a very popular activity, resulting in long lines of visitors wishing to try this gourmet street food.
The Hida beef sushi served here is made from a rare part of the 5th rank (the highest grade) Hida beef. They select the best ingredients and seasonings to bring out the full flavor of Hida beef, including Hida Hitomebore rice and our original soy sauce. They begin preparation of the sushi (slicing, shaping, arranging, etc.) after each order, so customers can enjoy freshly made sushi anytime.
The most popular menu is the "San shu mori" offering three different flavors: "bamboo charcoal salt” which gives the meat its original flavor; "Ginger soy sauce" with freshly ground ginger from Amami-Oshima Island; and "Gunkan" which is a perfect combination of quail's yolk and their original sweet-spicy sauce.
The sushi is served on a hand-baked rice cracker mixed with seaweed. It is a perfect snack to a stroll around without leaving any waste behind. If you want to eat them in more relaxed environment than the street, you can use the rest area in the courtyard at the back of Sakuya Konohana, a knick-knack store next to the Kotte-ushi.
