Suehiro Sake Brewery Kaeigura
The spirit of sake brewing, passed down over generations.
This is a long-established sake brewery that was founded in 1850 and stands out among the many old sake breweries in Aizu Wakamatsu. The brewery has been making sake rooted in the local area by adhering to the three articles of the Jizake Sake Brewery: (1) natural and delicious mashing water, (2) Aizu Touji craftsmanship, and (3) sake rice grown on the land where the mashing water comes from.
However, they did not simply follow tradition. The fourth president developed the "Yamahai brewing method," which is now used throughout Japan, through trial and error in collaboration with brewing engineer Kinichiro Kagi. Furthermore, they have always had a pioneering spirit, breaking with tradition by inviting master brewers from other prefectures to learn from them.
In addition, most of the structures of the Kaeigura have been designated as cultural properties, and the brewery has been named one of the top "Sake Breweries Fun to Visit in Japan". Visitors can take a free sake brewery tour and taste coffee made with mashing water, chiffon cake infused with Daiginjo sake, and more.
