The roux, based on beef tendon broth and tomato puree with a hint of Japanese dashi, is spicy and flavorful, maintaining its deep taste through four generations. The default topping is a raw egg, which, when mixed in, adds a mild touch. You can also enhance the flavor with the Worcestershire sauce provided on the table.
