Yubadon Naokichi is a Japanese eatery where you can try dishes made with yuba, the silky top layer skimmed from tofu. The original wooden building was renovated in the years between 1955-1964, now sporting a cozy eating space inside with views of Haya River flowing just outside.
The yuba used in their dishes has an extra smooth, silky taste because its made by Hakone Kakuyama, a high-quality tofu maker that sources that pristine “hime no mizu” waters of Ohiradai.
The most popular item on the menu is the Yubadon (1,100yen), made with their prized yuba tofu silk and finished with an egg. The yuba has a rich, fresh flavor that you can only get from delicately derived soy milk that is then simmered with shiitake mushrooms, mitsuba herb and the house broth before finishing with an egg. It’s cooked directly in an earthenware pot for you to enjoy hot and pipping. The plume of fragrant steam is sure to keep you going back for more.
In addition to their yubadon dish, there is also Yuba Zenzai desserts for 720 yen, or Tofu Zenzai for 720 yen as a side.
