This popular Hakata Ramen restaurant has six locations in Fukuoka Prefecture. The restaurant boasts a unique pork bone broth that is distinctly different from both Nagahama and Hakata ramen, based on the concept of "pure soup that everyone, young and old, men and women, will drink up. The soup is made from pork bones mainly produced in Japan, the gara of "Aritadori," a brand-name chicken from Saga Prefecture, aromatic vegetables from Kyushu, and mineral-rich groundwater, which is carefully prepared every morning to produce a clear soup with no cloying taste.
The ultra-thin, custom-made noodles are the perfect accompaniment to the umami-rich tonkotsu (pork bone) soup. The slightly sweet, melt-in-your-mouth chashu pork, slowly prepared with a secret sauce, is also excellent.
Based on the simple “Hakata Shinshin Ramen”, which only has char siu, wood ear fungus, and green onions, there is “Ramen with boiled egg” topped with a soft-boiled egg, and “Char siu ramen” with plenty of char siu and a lot of mustard mustard greens. There are many variations, such as the spicy flavored Takana Ramen.
In addition to ramen, a wide variety of noodle dishes are available, including pork-based "Hakata Champon" with plenty of vegetables, "Hakata Sara Udon" with thick sticky noodles, nostalgic "Sauce Yakisoba" and "Yaki Ramen," a famous specialty of Hakata.
