Of all the different Hakata Tonkotsu Ramen stores, “Hakata Ikkousha” is perhaps the most popular. Operating 5 different diverse brands, Ikkousha’s main store front is located in front of JR Hakata Station.

The main feature of this ramen is the “Original Froth Type” broth. Perfectly created with passion using “Jukusei oidaki technique (simmer the broth while adding young broth to the simmering broth to enhance the flavor)”, the broth is delicate, with a creamy broth. Fermented soup in a pot is mixed with fresh, newly made broth. This special mixture of steaming and creating creates the delicious froth with the thick, sweet, and umami-infused flavor of Tonkotsu. Noodles are made in-house with the finest wheat, tasting like true wheat. The broth is mixed with a special sauce/soup created with several fish stock, and local soy sauce, creating the perfect bowl of Tonkotsu ramen.

Like many Hakata Tonkotsu ramen, customers can choose the hardness of the noodles. There are 5 different types of hardness from “Barikata” to “Bariyawa”, recommended by the staff members are “Yawa”, which allows customers to enjoy the authentic softness of the noodles. Make sure to give it a try.

On a previous trip to Kyoto, I tried Hakata Ikkousha at Kyoto Ramen Koji. I couldn’t stop thinking about that rich, frothy tonkotsu ramen afterward.

This time, I finally made it to the main store in Fukuoka, and I was so excited! The broth was even richer and more aromatic than I remembered. The velvety foam carried an intense tonkotsu flavor, yet it was surprisingly light and not greasy. Paired with thin noodles and tender chashu, every bite was incredibly satisfying.

After visiting both the Kyoto location and the Fukuoka main store, I not only got to enjoy that familiar flavor again but also experienced the main store’s more refined, authentic appeal. It was definitely worth making a special trip for.

The tonkotsu broth was rich but not overly salty, and it went down really smoothly. The thin noodles soaked up the soup, so every bite was packed with deep tonkotsu flavor. The chashu was tender too, so it’s easy to see why this is known as the original “foamy-style” ramen.
If you’re visiting Hakata, you really shouldn’t miss this bowl. If you love tonkotsu ramen, I definitely recommend adding it to your plans and seeing whether you’ll end up like me—wanting to come back after just one visit!

Every time I come to Hakata Station in Kyushu, I have to eat at Ikkousha! Their tonkotsu ramen is especially good. Among all the shops in Hakata Ramen Street, Ikkousha is always the busiest! 👍
