The "te wo ke bento" originated when the second-generation owner, Mr. Yoshikazu Horiba, was deeply impressed by French soufflés he encountered in his later years. It is a truly authentic dish, with each soufflé carefully baked for 25 minutes after ordering. While it may seem different from traditional Kyoto cuisine, it aligns with the restaurant's philosophy of serving dishes made only in their own watchful kitchen.
The soufflé flavors include classic vanilla, matcha, chocolate, and fromage, as well as seasonal flavors such as cherry blossoms in spring, lemon in summer, Western pear in autumn, and yuzu in winter, with 2-3 varieties changing monthly. The delicate texture that melts gently in your mouth and the gentle flavors will fill your heart with a sense of happiness.
