Original Kawara Soba Takase Kawatana Honkan

Takase, the original Kawara Soba restaurant in Yamaguchi Prefecture, is a long-established place renowned as the birthplace of Kawara Soba. Kawara Soba is a unique dish served on a heated tile, topped with green tea-infused soba noodles, beef, and shredded omelet. The idea originated during the Satsuma Rebellion, where soldiers used tiles to cook wild greens and meat. Takase began serving this dish, which eventually became a local specialty in Yamaguchi.

Takase's soba noodles are mixed with Uji matcha, giving them a rich, fragrant aroma. The dipping sauce is sweet, made with plenty of bonito and kelp broth, served with green onions, lemon, and grated daikon radish. Enjoy the crispy bites of soba noodles heated on the tile to perfection.
