Often called the "Jewel of Lake Biwa" due to its beautiful silver scales, it is known for its rich, fatty flesh, reminiscent of premium toro (fatty tuna). The restaurant offers a diverse menu including fresh sashimi, lightly seared trout, smoked trout ham, and marinated nanbanzuke. Signature dishes include chirashi sushi featuring trout sashimi, and savory trout sautéed in butter and soy sauce served in elegant bento boxes.
