Live matsuba crab, on the other hand, stands out for its translucent, delicate meat. Because it is prepared just before serving, you can enjoy its firm texture at its freshest. During the fishing ban in July and August, beni-zuwai crab is served frozen. Live matsuba crab is available only for a limited time, from November to the end of March. The menu also features Pacific bluefin tuna dishes and seasonal seafood.
