100 Years Sea
A new-generation Japanese restaurant where you can enjoy sustainable cuisine while imagining the future of the Earth.
Opened in 2022, this distinctive Japanese restaurant in Tokushima offers a truly immersive dining experience surrounded by the artworks of teamLab, known for their innovative and ever-evolving creations. In this extraordinary space, guests can enjoy cuisine centered on the theme of sustainability.
Committed to reducing food waste, the restaurant uses so-called “imperfect” natural fish and vegetables that would normally be discarded due to size or appearance. Skilled chefs transform these ingredients into creative dishes that are gentle on both the body and the environment. The menu focuses on à la carte offerings, along with course meals starting from ¥3,000. Guests can sit at the counter surrounding the open kitchen and enjoy their meal while watching the chefs at work.
Encircling the space like a wall is teamLab’s artwork 100 Years Sea [running time: 100 years], first unveiled in 2009. This one-of-a-kind video work runs over a span of 100 years, reflecting WWF’s 2009 prediction that global sea levels could rise by up to 120cm by the end of this century. The projected “sea” within the space gradually rises over the course of a hundred years, inviting diners to contemplate the future of the planet while savoring nature’s bounty.
