Chinese Restaurant Ryutei in Sendai, Miyagi Prefecture, is known for traditional Chinese cuisine—and for being the birthplace of hiyashi chuka (chilled Chinese noodles). In 1937, the founder created “ryobanmen” so it would be easy to eat even in hot weather, marking the start of today’s hiyashi chuka. People visit from all over Japan for the flavor, and lines at lunchtime are almost guaranteed at this popular spot.
Their signature hiyashi chuka is made with plenty of vegetables with nutrition in mind. After much trial and error, it became a standout dish, with a homemade sauce using orange and lemon. You can choose either a soy sauce-based sauce or a sesame sauce. The toppings are served on a separate plate from the noodles—jellyfish, steamed chicken, ham, cucumber, chashu pork, and egg are arranged beautifully for a colorful presentation. Enjoy the toppings like appetizers, or pair them with the pleasantly chewy noodles—either way, you can savor it in your preferred style.
