Founded in 1582, Tamaruya is located in Mizusawa, Ikaho Town, Shibukawa City. It specializes in Mizusawa udon, one of Japan’s three great udon varieties. The restaurant began by serving udon to visitors staying at Ikaho Onsen for therapeutic bathing and to worshippers visiting Mizusawa Kannon. It is widely known as the birthplace of Mizusawa udon.

The restaurant serves two kinds of noodles: glossy white 100% wheat udon and Koden Kirimugi, made with whole wheat flour milled in-house with a stone mill. Both are kneaded using carefully selected domestic wheat flour, natural salt, and the famous water of Mizusawa. They are known for their firm bite and smooth texture, with the flavor of wheat becoming richer as you chew. The broth uses ingredients such as Rishiri kombu and makombu, selected according to the season and weather. Adding honkare katsuobushi and tuna flakes creates a rich yet clean flavor.

The restaurant has 200 seats and also offers four private rooms (reservation required, additional charge). It is popular as a dining spot that is easy to use for large groups, including families and friends.
