Enpachi “Ankoro Mochi”

A signature sweet from a long-established confectioner founded in 1737 in Hakusan, Ishikawa Prefecture, where its main store still stands today. It is made by combining the shop’s proud sweet bean paste, prepared over three days, with mochi of just the right softness, then carefully wrapping each piece by hand in bamboo leaf.

Another secret behind its unchanged deliciousness is the use of glutinous rice grown at the foot of Mt. Hakusan and clear underground spring water from Hakusan. Wrapping it in bamboo leaf helps preserve moisture and provides a natural antibacterial effect, keeping the wisdom of past generations alive from the Edo period to today. The smooth bean paste also takes on a subtle bamboo aroma, which brings out its flavor even more.

While pursuing an unpretentious “common people’s taste” affordable for just a few coins, each step is carried out with great care to create a simple yet one-of-a-kind flavor.
