Kanazawa Fumuroya "Oyatsu Fu"
Fumuroya, a Kagafu manufacturer with a history of over 150 years since its establishment in 1865, continues to uphold traditional methods, flavors, and skills while creating new gluten-based products. They produce various Fu dishes and gluten-based confectioneries.
My family and I visited Kanazawa and chanced upon this snack at their cafe. It's sublime! I raced to their store and bought 6 packs before our train was due to leave. I've never eaten anything so light and crisp. I am agog and have been scouring the net to find out how they make a usually chewy or spongy "fu" so light and crisp! No luck so far.
