Located in Fukushima City, Fukushima Prefecture, “Ganso Enban Gyoza Manpuku” is a specialty restaurant serving enban gyoza, founded in 1953. It is known as the birthplace of “enban gyoza,” one of Japan’s three great gyoza styles. The restaurant does not serve rice or noodle dishes, staying focused entirely on gyoza.

At “Ganso Enban Gyoza Manpuku,” each dumpling is completely handmade, following the teachings of its founder, Katsue Kanno. The house-made wrappers are made by blending two kinds of flour, kneading them by hand, and aging them for two days. The result is a pleasantly chewy texture that goes down smoothly. The filling uses plenty of napa cabbage, which is dried over two days to bring out its natural sweetness. Ground pork, green onion, garlic chives, garlic, and ginger are then added to concentrate the savory flavor of the ingredients. Cooked slowly with a small amount of oil, the gyoza turn out light and juicy. The Manpuku way is to enjoy them with house-made chili oil, vinegar, and soy sauce from Kitakata.

The interior has a nostalgic atmosphere. There are 64 seats in total, including counter seats and tatami seating. In addition to enban gyoza, the menu also includes boiled gyoza, house-made pickles, and seasonal motsunabe and kimchi hot pot. Takeout is also available in increments of 10, starting from 30 pieces.
