    The lamb was grilled until lightly charred and fragrant on the outside, while the meat stayed tender. It was very moreish with the special sauce and didn’t have nearly as strong a gamey lamb smell as I had imagined. Grilling it with onions added their sweet vegetable aroma and gave the overall flavor more depth.

    It was my first time trying Jingisukan barbecue, and it felt very characteristic of Hokkaido. Grilling the meat myself while enjoying it piping hot was fun, and the atmosphere was pretty good too! It’s definitely worth planning a meal to try it when traveling in Hokkaido!

Then, tender slices of meat are laid out and slowly grilled. Fresh local Hokkaido vegetables are spread beneath the grill, catching the dripping meat juices and fat. The vegetables soak up all that flavor, creating a delicious mix of savory and sweet! Hokkaido vegetables are already naturally very sweet, and grilling makes them even sweeter and tastier. Eating big bites of meat with the vegetables is simple but incredibly satisfying and enjoyable!
