Made only with soybeans and salt, Hatcho miso is naturally brewed and aged for at least two years using a traditional wooden-barrel method. Headquartered in central Okazaki, Kakukyu is known as a long-established Hatcho miso maker dating back to the Edo period.

The company’s visitor facility, Hatcho Miso no Sato, has a restaurant where you can enjoy a wide range of dishes made with its signature Hatcho miso. Classics such as miso nikomi udon and miso katsu offer the polished flavor you would expect from a brewery that knows Hatcho miso inside and out. The menu also includes unique dishes such as mapo tofu and demi-glace hamburg steak, using Hatcho miso’s deep richness and distinctive flavor as a hidden accent.
