Josuian “Tsukushi Mochi”

A classic Fukuoka souvenir from a long-established confectionery shop, with over 40 years of sales history.

This mochi is made from “Hiyoku rice,” a glutinous rice grown in the fertile Chikushi Plain and kneaded with carefully selected water, then topped with plenty of kinako and, if you like, drizzled with kuromitsu syrup. The kinako showcases the skill of a long-established maker: the skins of rare “Tamahomare” soybeans are removed after roasting them to the perfect degree, bringing out their aroma and sweetness to the fullest. The soft mochi spreads with the nutty fragrance of kinako, while the rich brown sugar syrup adds a refined sweetness. Though simple in composition, each step is carefully crafted, creating an especially elegant flavor.
