Yamadaya’s “Toyoka”
A new Hiroshima favorite with a delightfully chewy texture.
Toyoka, made by long-established confectioner Yamadaya in Miyajima, Hiroshima, is one of Hiroshima’s signature sweets alongside momiji manju.
Its defining feature is its pleasantly chewy texture, created by a dough made with eggs, butter, and 100% glutinous rice flour, as well as its moist, delicate texture and aroma. Each piece is generously filled with Yamadaya’s original blend of smooth and chunky red bean pastes, offering a refined, rich sweetness that brings out the natural flavor of Japanese-grown azuki beans.
The name comes from the paulownia crest of the Ueda Sōko Tradition of Japanese Tea Ceremony, while its square shape, inspired by a zabuton cushion, also reflects its connection to tea culture. Since its launch in 1997, Toyoka has earned widespread recognition, including certification as part of “The Hiroshima Brand” and the Honorary President’s Award at the All-Japan Confectionery Exposition.
Toyoka can be enjoyed at room temperature, chilled, or lightly toasted, with each preparation offering a different texture and flavor. Created through a combination of traditional bean paste-making techniques and fresh ideas, it remains a popular Hiroshima souvenir among people of all ages.
