The restaurant has long been a popular kappo (Japanese-style restaurant) for visitors to Izumo Taisha Grand Shrine. It was founded in 1882 by Kumaichi Yasui, a chef in the Ministry of the Imperial Household. Since then, the restaurant has been serving dishes to the emperor's imperial envoys during spring festivals and has continued to carry on its venerable traditions with sincerity.
The specialty, "Uzu-ni," is a gem of a dish made with a soup stock from puffer fish, topped with kanpyo (dried gourd), shiitake mushrooms, and puffer fish meat. It is poured with a thickened dashi made with kuzu starch. The name "Uzu-ni" comes from the fact that the rice is served as if it were dipped (uzu-meru) in the dashi. The dish is simple in appearance, yet elegant and flavorful, suitable for the hospitality of the historic town of Taisha. It is available not only as a stand-alone dish but also as a luxurious set meal that includes sashimi and tempura.
Other dishes in the repertoire include "Kaisen-don," a chirashi-bowl topped with fresh seafood from the Sea of Japan, and "En-musubi Zen," a series of dishes using a variety of local ingredients.
