Iekei Ramen Kakushinka TOKYO is run by the owner behind SORANOIRO, whose original restaurant received a Bib Gourmand in the MICHELIN Guide Tokyo on three occasions. The shop specializes in Iekei ramen, a Yokohama-style ramen with a pork-bone and soy sauce broth, and operates on Tokyo Ramen Street under the concept of “bringing innovation to Iekei ramen.”
The signature dish is Kakushinka special. Its soup has a smoother mouthfeel than conventional Iekei ramen and is paired with specially made noodles using Japanese-grown Haruyokoi wheat. The noodles are topped with three cuts of chashu (seasoned pork)-leg, belly, and loin-all made with Japanese pork. The menu also goes beyond Iekei ramen with original dishes such as Karashi Men, flavored with chili peppers and Japanese mustard, and Hojun Chiyu Soba, noodles finished with just chiyu (chicken oil) and seasoning sauce.
